Tofu and Mushrooms
Tofu and Mushrooms
from Ellen's kitchen with thanks to Bon Appetit, makes 4 servings
Ingredients:
- 14 oz block firm tofu, drained
- 3 tbs vegetable oil, divided
- 12 oz mixed mushrooms, trimmed and sliced into 2" pieces
- 3 celery stalks, sliced thinly on the diagonal
- 2" piece of ginger, peeled and thinly sliced
- 1 serrano chile, seeded and thinly sliced
- 3 tbs soy sauce
- 1 tsp sesame oil
- salt
- 1 lime, juiced
- 1/2 cup coarsely chopped cilantro
Mix:
- 1 tbs oil, celery, ginger, chile, soy sauce, sesame oil, salt, and lime juice in large bowl.
Cut:
- tofu into cubes of desired size and add to bowl. Let marinate for at least 1 hour or more.
Prepare:
- mushrooms and set aside.
Heat:
- large skillet with remaining vegetable oil. When shimmering, add mushrooms and cook to desired brownness. Add marinade and tofu. Stir and cook until marinade is largely gone and tofu lightly browned.
Serve:
- over optional rice and with cilantro sprinkled on top.
