Green Goddess Dip

 Green Goddess Dip/Dressing

Ingredients:
  • 1/2 cup dill
  • 1/2 cup parsley
  • 1/2 cup mint
  • 1/2 cup basil
  • 2 garlic cloves, chopped
  • 2 scallions, white and green parts, chopped
  • 1 1/2 tbs lemon juice, more, to taste
  • pinch Kosher salt
  • 1/2 cup olive oil
  • 1/2 cup feta cheese
  • 1/2 cup yogurt
  • 1/4 cup mayonnaise, optional
Put:
  • herbs, garlic, scallions, lemon juice, and salt in food processor and run until finely chopped.
Drizzle:
  • olive oil into running processor until incorporated.  Add feta, yogurt, and mayonnaise, if desired.  Taste and add more salt, if desired.
This:
  • is good thickness for dip.  If want salad dressing, add a bit more lemon juice and olive oil.
Great with raw veggies, pita chips, salad, etc.
