Gluten-free Almond Cookies

 Gluten-free (but delicious!) Almond Cookies

Ingredients:
  • 3 cups almond flour
  • 1 cup sugar, plus a bit for dusting
  • 1/8 tsp almond extract
  • 3 egg whites
  • 1 cup sliced almonds
Preheat:
  • oven to 350 degrees (325 convection)
Line:
  • three cookie sheets with parchment paper and put sliced almonds in a low flat dish.
Combine:
  • almond flour, sugar, and almond extract in a bowl.
Lightly:
  • beat egg whites in mixer, and then flour, sugar, and extract until combined into a firm paste.
Roll:
  • 1 1/4" balls of dough in sliced almonds and place on baking sheet, 12 to a sheet.
Bake:
  • for 12-15 minutes until lightly browned and then cool on rack.
