Gluten-free Almond Cookies
Gluten-free (but delicious!) Almond Cookies

Ingredients:
- 3 cups almond flour
- 1 cup sugar, plus a bit for dusting
- 1/8 tsp almond extract
- 3 egg whites
- 1 cup sliced almonds
Preheat:
- oven to 350 degrees (325 convection)
- three cookie sheets with parchment paper and put sliced almonds in a low flat dish.
Combine:
- almond flour, sugar, and almond extract in a bowl.
Lightly:
- beat egg whites in mixer, and then flour, sugar, and extract until combined into a firm paste.
Roll:
- 1 1/4" balls of dough in sliced almonds and place on baking sheet, 12 to a sheet.
Bake:
- for 12-15 minutes until lightly browned and then cool on rack.
