Ingredients:
  • 4 cups flour
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/4 tsp ground cloves
  • 2 cups packed brown sugar
  • 1 cup unsalted butter, room temperature
  • 2/3 cup dark molasses
  • 2 eggs, room temperature
  • 2 cups raisins, or other dried fruit
Preheat:
  • oven to 350 degrees.  Line a cookie sheet with parchment.  Grease with butter and flour both parchment and sides of pan.
In a large bowl:
  • combine all dry ingredients, except sugar.  Set aside.
In a stand mixer:
  • cream butter with paddle, for about 2 minutes.  
  • Add sugar, and mix until light and creamy, about 2 minutes.
  • Mix in eggs, one at a time. 
Reduce speed:
  • and drizzle in molasses.  Mix until thoroughly combined.  
With:
  • speed at lowest setting, slowly add dry ingredients.  Mix until just combined.
Add:
  • dried fruit and stir with spatula/spoon until just incorporated.
Use:
  • floured fingers and distribute dough evenly across baking sheet.
Bake:
  • for 16 minutes, until toothpick comes out clean.  Allow to cool completely before cutting.
