 Firecracker Salmon

Ingredients:
  • Salmon:
    • 1.5 lb skinless salmont fillet, cut into 1 1/2" wide strips
    • 2-3 tbs canola oil
    • chopped chives, for garnish
  • Marinade:
    • 1/3 cup Sriracha sauce
    • 1/2 cup brown sugar
    • 3 tbs soy sauce
    • 3 garlic cloves, crushed
    • 1-2 tsp red pepper flakes
    • 1/2-1 tsp salt
  • Mix together marinade ingredients and marinate salmon portions in refrigerator 30-60 minutes.
  • In large, oven-proof skillet:
    • heat oil over medium-high heat.  Pan sear salmon on both sides, about 2-3 minutes each side, until crispy.  Preheat over to 400.  Transfer pan to oven and finish cookinging through, about 5 minutes, to 145 internal temperature.  Garnish with chopped chives.
