Tabbouleh

from Ellen's kitchen, with thanks to Bob's Red Mill  

Ingredients:
  • 1 cup Bob's Red Mill red bulgar
  • 1 cup boiling water
  • 3 cups chopped fresh parsley
  • 1/4 cup finely chopped fresh mint
  • 1/4 cup minced scallions
  • 2 medium tomatoes, seeded and diced
  • 1 medium cucumber, diced
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • 1/4 tsp ground black pepper
  • 6 tbs lemon juice
  • 3 tbs olive oil
Combine:
  • bulgar and boiling water and let sit for one hour.  Stir.  Add all remaining ingredients, mix, and refrigerate for at least one hour.
