Blackened Chicken with Avocado Cream Sauce

Ingredients:
  • for chicken:
    • 1 tsp cumin
    • 1 tsp onion powder
    • 1 tsp paprika
    • 1 tsp black pepper
    • 1/2 tsp kosher salt
    • 1/2 tsp cayenne pepper
    • 4 boneless, skinless chicken breasts
    • 1 1/2 tsp vegetable oil
  • for sauce:
    • 1 to 1 1/2 avocado, peeled and pitted
    • 1/2 cup water
    • 1/4 cup nonfat greek yogurt
    • 1 1/2 tsp lemon juice
    • 1/2 tsp garlic powder
    • 1/4 tsp salt
Make Avocado Cream Sauce:
  • Blend:
    • all sauce ingredients in food processor until smooth.  We like the sauce a bit on the thick side, and thus use the larger quantity of avocado.
Make Chicken:
  • Stir:
    • spices in small bowl.
  • Pat:
    • chicken dry with paper towels and rub with spice mixture.
  • Heat:
    • oil in large nonstick skillet with lid over medium-high heat.  Add chicken to skillet, cover, reduce heat to medium.  Cook 4 minutes.  Turn chicken over and continue to cook, covered, 2-4 minutes.  Cook until interior temp of chicken is 165.  
  • Transfer:
    • chicken to plate, cover loosely with foil, and let rest 5 minutes.  
Serve chicken with sauce.
