Debbie's Sugar Coated Pecans

  • 1 egg white
  • 1 tbs water
  • 3/4 cup granulated sugar
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp cayenne pepper (optional)
  • 1 lb pecan halves
  • oven to 250.  Line baking sheet with parchment.
In mixing bowl:
  • whip egg white and water until frothy.
In separate bowl:
  • mix sugar, salt, cinnamon, and cayenne.
  • pecans to whipped white, and stir to coat nuts evenly.  Slowly stir in sugar mixture until pecans are coated.  Spread nuts out on baking sheet.
  • for 1 hour, stirring every 15 minutes.
