Spiced sweet potato bread

Spiced Sweet Potato Bread

Ingredients:
  • 1 1/2 cups all purpose flour
  • 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsps cinnamon
  • 1 tsp cardamom
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves
  • 2 eggs, lightly beaten
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup oil
  • 1 tsp vanilla
  • 1/3 cup applesauce
  • 1/4 cup water
  • 2 tbs molasses
  • 1 1/2 tightly packed cups of grated sweet potato (about 2 medium sweet potatoes)
  • 1/2 cup chopped dried fruits or nuts (optional)
  • 1/4 cup turbinado sugar
Preheat:
  • oven to 350.  Grease one loaf pan and set aside.
Combine:
  • dry ingredients (down to cloves) in bowl of stand mixer and mix to combine.  
In:
  • a separate bowl, mix eggs through molasses.  Add sweet potato to wet ingredients and combine with spoon.
Pour:
  • wet ingredients into dry and mix until just blended.  Add optional nuts or fruits here and stir just a few times.
Pour:
  • batter into pan and sprinkle top with sugar.  Bake for 50 minutes, or until tester comes out clean.  Let cool in pan for 5 minutes, and then turn out onto rack and cool for 1 hour. 
Delicious straight out of the oven, toasted, with butter, with ice cream...Yum! :)
