Sweet Potato Stacks

Ingredients:
  • 1/8 cup unsalted butter, melted
  • about 4 small sweet potatoes, peeled, and cut into 1/4 thick rounds
  • cooking spray
  • salt
  • 1 oz parmesan cheese, grated (about 1/4 cup)
Preheat:
  • oven to 375
Melt:
  • butter and continue on medium until just starting to brown.
Place:
  • slices of potatoes in muffin pan that has been sprayed with cooking spray.  Trim potatoes as needed to fit into muffin pan, so that about 4 slices are in each muffin area.  Sprinkle with salt and parmesan, and put about 1/2 tsp of butter/garlic onto each stack.  Cover pan with foil.
Bake:
  • at 375 for 25-30 minutes or until tender.  Remove pan from oven, discard foil.  
Put:
  • boiler on high and put pan under broiler for about 3 minutes or until nicely browned.
