Maks' Dairy Free Banana Muffings

Maks' Dairy Free Banana Muffings (makes 12 regular, 24 mini)

Ingredients:
  • 1/3 cup melted coconut oil or olive oil
  • 1/2 cup maple syrup or honey
  • 2 eggs
  • 3 mashed bananas
  • 1/4 cup of milk of choice (coconut, almond, regular if not going dairy free)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 tsp cinnamon, plus more for sprinkling on top, if desired
  • 1 3/4 cups whole wheat flour
  • 1/3 cup rolled oats, plus more for sprinkling on top, if desired
  • 1 tsp sugar (optional, for sprinkling on top)
Optional additions:
  • chopped nuts, raisins, chocolate chips
Preheat:
  • oven to 325.  Grease muffin tin with cooking spray.
In:
  • large bowl, beat oil and syrup.  Add eggs and mix until blended.  Add bananas and milk.  Mix in baking soda, salt, vanilla, cinnamon.  Add flour and oats until just combined.  Add any additional ingredients.
Spoon:
  • into muffin pan(s), sprinkle with oats, cinnamon, and sugar, if desired, and bake for 23 minutes, or until tester comes out clean.  Remove from pan and let cool on rack.
