Brazilian Cheese Bread

Brazilian Cheese Bread

Ingredients:
  • 1 egg, room temperature
  • 1/3 cup olive oil
  • 2/3 cup milk
  • 170 grams tapioca flour
  • 100 grams grated cheese of your choice (we have started using sharp cheddar 90%, 10% parmesan for great flavor, slight crisp)
  • 1 heaping tsp salt
Preheat:
  • oven to 400 degrees, and grease mini-muffin tin thoroughly.  
Mix:
  • all ingredients in Cuisinart until smooth.   Use silicone spatula to wipe down bowl and pulse a few more times.  You should end up with about 2 cups of batter.
Pour:
  • batter into measuring cup and then pour into mini-muffin tin, filling each cup at least 80 percent full. (We have discovered the quantity in each cup seems to be very important to the roundness.  Really need to measure it exactly and then will post).  Bake for 15-20 minutes, or until puffy and lightly browned.  Remove to rack and let cool for a few minutes.  Serve warm.
