Pastrami

Ingredients:


  • 4 lbs corned beef
  • 4 tbs ground pepper
  • 2 tbs ground coriander
  • 1 tsp mustard powder
  • 1 tbs brown sugar
  • 1 tbs paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
Mix:
  • dry ingredients and rub on cooked corned beef, letting sit in fridge overnight.  
Put:
  • in smoker at 230 degrees with smoking on for 2 hours.  Turn smoke off and let cook in low temp oven/grill/smoker until meat reaches 190-200 degrees.  Can take up to 12 hours.
Let:
  • cool, and cut into really thin slices.  Enjoy! :)
