Award-Winning Potato-Lovers Salad

Award-Winning Potato-Lovers Salad (serves 2)

  • 6 tiny new potatoes (red skinned)
  • 2 tbs butter
  • 1/2 tsp salt
  • pepper, to taste
  • 1/4 tsp paprika
  • 2 cups broccoli florets
  • 4 cups lettuce
  • 2 cups spinach
  • tomatoes, cucumber, and red onion (optional)
  • potatoes whole and unpeeled in vegetable steamer, covered, over boiling water for 20 minutes or until almost tender.  While potatoes are steaming, prepare broccoli,  and greens.  Remove potatoes from heat, cool, and then cut into 1/2 inch cubes.  Place in large bowl and set aside.
  • broccoli florets in steamer for 3-5 minutes or until just tender and bright green.  Remove from heat, rinse to stop cooking, and set aside to cool.
  • butter, and pour over potatoes.  Add salt and paprika, and mix well.  Place potatoes in single layer on baking sheet, and broil for 5-10 minutes until browned to liking.
  • lettuce and spinach in large bowl, add potatoes and broccoli.
  • with Lemon Salad Dressing (see entree on Forkcraft) and serve.
