Frieda's Spiced Raisin Cookies

Ingredients for cookies:
Frieda's Spiced Raisin Cookies

  • 1/2 lb butter, softened
  • 2 cups brown sugar
  • 3 tbs light corn syrup
  • 2 eggs
  • 1 cup sour cream
  • 1 tbs milk
  • 2 tsp orange juice
  • 2 tsp orange rind
  • 4/12 cups all purpose flour
  • 2 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 2 cups raisins
  • 1 cup chopped walnuts or pecans (toasted in oven at 350 for about 7 minutes)
Ingredients for icing:
  • 2 tbs orange juice
  • 1 cup powdered sugar
Cream:
  • butter and sugar.  Add eggs, corn syrup, sour cream, milk, 2 tsp orange juice and rind and mix until combined.  
Measure:
  • flour, baking soda, salt, cinnamon, nutmeg, and cloves into bowl and stir for about 5 seconds.  
Gradually:
  • add dry ingredients to mixer, mixing after each addition until just combined.  Add raisins and nuts and mix briefly.
Divide:
  • dough approximately in half and form into discs (dough will be sticky).  Wrap each disc with plastic wrap and refrigerate overnight.  Roll out on floured board and sprinkle flour on top; roll until 1/4 inch thick and cut with circular cookie/biscuit cutter.  
Bake:
  • at 350 for 15-17 minutes until browned.  Remove to cooling rack.
Mix:
  • 2 tbs orange juice and powdered sugar for icing.  Put icing in Ziploc sandwich bag, snipping off a small bit of a corner.  Drizzle icing across tops of cookies when cool.  
Makes:
  •  about 6 dozen cookies.
