Frieda's Chinese Chews

Chinese Chew

Ingredients:
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1 1/2 cups granulated sugar
  • 1/4 tsp salt
  • 1 cup pitted dates, chopped finely
  • 1 cups chopped walnuts
  • 2 eggs, beaten until light
Combine:
    Chinese Chew (before rolled)
  • flour, baking powder, 1 cup sugar, and salt in small bowl.
Crack:
  • eggs into bowl of mixer, and mix until light.  Add dates, nuts, and flour mixture.  Combine well.
Combine:
  •  well and spread, with greased fingers, in thin sheet on greased baking pan (may not cover entire pan, which is fine.) 
Bake:
  • at 400 for about 12 minutes, or until done (will be the consistency of cake and slightly brown).  
Remove:
  • from oven at once and cut into 1" squares and roll into balls.  Rolls balls in remaining 1/2 cup sugar.
Makes:
  • about 5 dozen cookies.
