Popovers/Yorkshire Pudding

Popovers (makes about 18)/Yorkshire Pudding

Ingredients (all at room temp):

  • 2 cups milk
  • 2 tbs melted butter
  • 2 cups flour
  • 1/2 tsp salt
  • 4 eggs
Butter:
  • muffin tin or popover pan well (using meat drippings works well also!)for popovers.  If making Yorkshire pudding, you may use roast pan (although may end up with very salt and peppered pudding), or another roast pan.  Put 1/2 cup melted butter or meat drippings, or combo in bottom of pan, tipping to cover entire bottom.
Beat:
  • just until smooth the milk, melted butter, flour, and salt.  Add eggs one at a time, but do not overbeat.  Put empty pans in oven to preheat and melt butter (do not burn!).  Remove from oven and immediately pour 3/4 cup batter into each greased cup.
Bake:
  • at 450 for 15 minutes and then turn down to 350 until brown (about 20 minutes more).
Remove:
  • from oven and try not eat all at one sitting! :)
