Mini Greek-style Meat Loaves

Ingredients:

  • 10 oz ground sirloin
  • 5 oz lean ground lamb
  • 1/3 cup dry breadcrumbs
  • 1/3 cup grated red onion
  • 4 tsp chopped fresh mint (optional)
  • 4 tsp chopped fresh thyme
  • 3/8 tsp salt, divided
  • 1/4 tsp ground allspice (optional)
  • 1/4 tsp crushed red pepper
  • 3 garlic cloves, minced
  • 1 large egg, lightly beaten
  • Pam
  • 1/2 cup plain fat-free Greek yogurt
  • 2 oz reduced fat feta, crumbled
  • 2 tbs fresh lemon juice, divided
  • 1 tbs olive oil
  • 1/4 tsp freshly ground black pepper
Preheat:
  • oven to 450.
Combine:
  • first 4 ingredients in large bowl.  Stir in 1 tbs mint, 1 tbs thyme, 1/4 tsp salt, allspice, and next 3 ingredients (through egg).  Press meat mixture into 8 muffin cups coated with Pam.  Bake at 450 for 7 minutes.  Turn broiler to high; broil for 3 minutes.
Combine:
  • feta, yogurt, 1 tbs juice, 1 tsp mint, 1 tsp thyme in mini food processor; pulse 10 times to combine (stick blender works fine also).
Serve with salad on side.
