Banana muffings

Banana Muffings aka Muffins

  • 3/4 cup whole wheat flour
  • 3/4 all purpose flour
  • 1/3 cup sugar
  • 1/2 cup nonfat dry milk
  • 2 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup Grape Nuts cereal
  • 1/2 cup raisins
  • 2 eggs
  • 2 mashed bananas
  • 1/8 cup butter, melted and cooled
  • 1/4 cup water 

  • large bowl, combine flours, sugar, dry milk, baking powder, and salt.  Stir in the cereal and raisins.
  • another bowl, beat the eggs, and combine with the bananas, butter, and water.  Add two together, stirring until the dry ingredients are just combined.
  • and flour a muffing pan.  Spoon the batter evenly between the 12 cups.
  • 350 for 30-35 minutes or until tester inserted in the center of muffing comes out clean.  Let cool in pan for 10 minutes before turning out onto cooling rack.
