Roasted Butternut Squash


  • 1 lb butternut squash, cubed
  • 1 medium baking apple, peeled, cored, cubed (optional)
  • 3 tbs butter, melted
  • 3 tbs honey (optional)
  • 1/4 cup pecans, finely chopped
  • oven to 400 degrees.
  • cubed squash and apple in lightly greased 8 x 8" baking dish. Add 2 tbs water and roast uncovered, stirring occasionally for 20 minute, or until almost cooked through (sometimes takes me over 30 minutes, really varies).  
  • in small bowl, combine melted butter, honey, and chopped nuts.  Remove squash from oven, and pour honey mixture over squash.  Stir lightly to coat.
  • to the oven for another 10 minutes, or until cooked through.
