Chipotle Turkey Lettuce Wraps

Chipotle Turkey Lettuce Wraps

Ingredients:

  • 1 head iceberg lettuce
  • 1 pound ground turkey
  • 1 tbs canola oil
  • 1 1/2 tsps cumin
  • 1 tsp chili powder
  • 1 tsp poultry seasoning
  • 1 tsp minced garlic
  • 1/2 tsp Thai chili paste
  • 2 canned chipotle chiles in adobo sauce (if you put one chile plus sauce in each cup of ice tray and freeze, you will have them for future use!)
  • 8 oz tomato sauce
  • Optional condiments:
    • Shredded cheese
    • chopped avocado
    • chopped tomato
Cut:
  • lettuce head in half.  Remove core and any limp outer leaves.  Rinse halves and let drip dry.  Gently pull apart and put leaves on serving plate.
In:
  • a large saute pan over medium-high heat, saute turkey in oil until almost cooked through.
In:
  • food processor or blender, process cumin, chili powder, poultry seasoning, garlic, chile paste, chipotle chiles,  and tomato sauce until smooth.  Add mixture to turkey in pan and simmer 30 minutes or until flavors blend.  
Spoon:
  • some of meat mixture onto piece of lettuce, sprinkle with condiments, and eat taco-style.
