Fowler's Peanut Brittle

Peanut (or any nut) Brittle
from the kitchen of Fowler Brown

Ingredients:

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1 cup water
  • 2 cups raw peanuts, or other nuts (cooked and/or salted nuts also work fine)
  • 2 tbs butter
  • 2 tsp baking soda
  • 1/2 tsp salt
Equipment:
  • candy thermometer
  • 2 10 x 15 inch baking pans, greased
Heat:
  • sugar, corn syrup, and water in saucepan until the sugar dissolves and the temperature reaches 305 degrees.
Add:
  • the butter, stirring until melted.  
Stir:
  • in the salt and nuts with a spatula, distributing them evenly.
Take:
  • the pan off the heat and quickly add the baking soda, stirring until it's well incorporated.
Quickly:
  • pour the mixture into the baking pans, and spread evenly.  Let cool and then break into desired size pieces.
