Lime and Peanut Coleslaw

Lime and Peanut Coleslaw

Ingredients:

  • 1 1/2 cups peanuts, roughly chopped
  • 1/2 of medium-large cabbage
  • 1 basket tiny cherry tomatoes, washed and quartered
  • 1 jalapeno chile, seeded and diced
  • 3/4 cup cilantro, chopped 
  • 1/4 cup freshly squeezed lime juice
  • 2 tbs olive oil
  • 1/4 tsp kosher salt
Cut:
  • cabbage into quarters and cut out the core.  Slice thinly, and then cut to make bite-sized pieces.  Combine the cabbage, tomatoes, jalapeno, and cilantro in bowl.
In:
  • separate bowl combine the lime juice, oil, and salt.  Add to the cabbage mixture and stir to combine.  
Just:
  • before serving, fold in the peanuts.  Taste and adjust flavors.  
Serves:
  • 6 as a side.
