Cauliflower Mash

  • 1 head cauliflower, roughly chopped
  • 1/2 - 1 cup chicken stock
  • 2 cloves crushed garlic
  • seasoning/spices of your choice
  • all ingredients in medium saucepan and bring to boil.  Reduce heat to medium and cover, allowing to cook for 20 minutes or so until cauliflower is very tender and easily mashed with a fork.  Add more stock if necessary.
  • ingredients into bowl of food processor, or mix with immersion blender.  
Flavoring suggestions:
  • rosemary, paprika, crumbled bacon, chopped chives, horseradish or wasabi, olive oil and chopped basil.
