Edamame Dip/Spread

Edamame Dip/Spread

Ingredients:

  • 16 oz cooked and shelled edamame
  • 1/2 cup fresh cilantro
  • 1/2 cup plain yogurt
  • 1 avocado
  • 1/2 cup water
  • 1/2 cup lime or lemon juice
  • 2 tsp salt (to taste)
  • Tabasco (to taste)
  • 2 drops sesame oil (to taste)
Place:
  • edamame in food processor.  Pulse several times.  Add all other ingredients, pulsing until well pureed.  Adjust seasonings.
Great:
  • as a dip, spread, on top of roasted chicken, etc.
