Pesto Sauce for Pasta
from the kitchen of Ellen, thanks to the Silver Palate Good Times Cookbook

  • 2 cups packed fresh basil leaves
  • 4 cloves garlic, crushed
  • 1 cup pine nuts or walnuts
  • 1 cup extra-virgin olive oil
  • Kosher salt and freshly ground pepper, to taste
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup freshly grated Romano cheese

  • Basil, garlic, nuts, and cheeses in Cuisinart.  Blend until consistent texture.  
  • Sweep the inside of the bowl with a rubber spatula to incorporate any stray particles into the mixture.  Turn the Cuisinart back on, and slowly pour olive oil in.  Blend until smooth, adding salt and pepper to taste.
  • 1/4 tsp of Red Chili Flakes for a little heat if desired.
