Pazooki
from the kitchen of Ellen, thanks to Ghirardelli and Oregano’s Pizza
Ingredients:
  • 8 oz unsalted butter, softened
  • 3/4 cup of brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/4 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups chocolate chips
Cream:
  • butter and sugars until completely blended.  
Bring:
  • enough water to boil on stove to cover two eggs.  Carefully put eggs in slotted spoon and lower into boiling water.  Keep eggs in water for 45 seconds to sterilize and then remove. 
Add:
  • eggs, one at a time, mixing after each.  Add vanilla.
Add:
  • flour, soda, and salt and mix until incorporated.  Add chocolate chips.
Heat:
  • oven to 375 degrees.
Take:
  • dough and press into the bottom of  ramekin to about 1/2 inch thickness.  Place ramekins on baking sheet and put in oven.  Bake for at least 8-12 minutes until lightly browned on top, but still undercooked on the inside. Bake longer if desire more thorough cooking.
Carefully:
remove ramekins onto individual serving plates, and top each with a scoop of vanilla ice cream
  • consume happily!
