Fresh Tomato Salsa

Street Tacos with Tomato Salsa

  • 2 jalapeno chili peppers, stemmed and seeded
  • 2 serrano chili peppers, stemmed and seeded
  • 2 yellow wax chili peppers, stemmed and seeded
  • 3 garlic cloves
  • 1 bunch scallions (green onions), trimmed, or 1/2 medium onion
  • 4 medium tomatoes
  • 1 cup cilantro leaves
  • 1/4 tsp salt
  • 1 tbs tomato paste
  • Chili peppers, garlic, scallions, tomatoes, and cilantro in food processor watch carefully - don’t over chop) or with a chef’s knife.  Transfer to a bowl.  
  • Add salt and tomato paste.  Stir to mix well.
  • If tomatoes were firm, may need to add a bit of water.
