Fresh Tomato Salsa

Street Tacos with Tomato Salsa |
Ingredients:
- 2 jalapeno chili peppers, stemmed and seeded
- 2 serrano chili peppers, stemmed and seeded
- 2 yellow wax chili peppers, stemmed and seeded
- 3 garlic cloves
- 1 bunch scallions (green onions), trimmed, or 1/2 medium onion
- 4 medium tomatoes
- 1 cup cilantro leaves
- 1/4 tsp salt
- 1 tbs tomato paste
Chop:
- Chili peppers, garlic, scallions, tomatoes, and cilantro in food processor watch carefully - don’t over chop) or with a chef’s knife. Transfer to a bowl.
- Add salt and tomato paste. Stir to mix well.
- If tomatoes were firm, may need to add a bit of water.
