Thai Chicken Wraps

 Thai Chicken Wraps

Ingredients:
  • 1/3 cup peanut butter
  • 1/4 warm water
  • 2 tbs soy sauce
  • juice from 1 lime
  • 1 tbs packed brown sugar
  • 1 tbs chili garlic sauce
  • 1/2 cups shredded rotisserie chicken
  • 8 large leaves (romaine, butter lettuce, etc)
  • 1 1/2 cups shredded carrot
  • 1 cup bell pepper strips
  • 1 cup sliced radishes (optional)
  • 1 cups sliced jicama (optional)
  • 1 medium avocado, cut into slices
  • 1/4 cup chopped cilantro or sliced green onions
Sauce:
  • Stir together: peanut butter, water, soy sauce, lime juice, brown sugar, and chili sauce.  Combine chicken with half of the sauce.
To fill:
  • place leaves up and open (may have to overlap 2 to get good wrap) and fill with ingredients.  Fold in sides and roll tightly.  Cut in half, if appropriate.
Serve:
  • with remaining sauce. 
    Might be a messy but delicious meal!
