Thai Chicken Wraps
Thai Chicken Wraps

Ingredients:
- 1/3 cup peanut butter
- 1/4 warm water
- 2 tbs soy sauce
- juice from 1 lime
- 1 tbs packed brown sugar
- 1 tbs chili garlic sauce
- 1/2 cups shredded rotisserie chicken
- 8 large leaves (romaine, butter lettuce, etc)
- 1 1/2 cups shredded carrot
- 1 cup bell pepper strips
- 1 cup sliced radishes (optional)
- 1 cups sliced jicama (optional)
- 1 medium avocado, cut into slices
- 1/4 cup chopped cilantro or sliced green onions
Sauce:
- Stir together: peanut butter, water, soy sauce, lime juice, brown sugar, and chili sauce. Combine chicken with half of the sauce.
To fill:
- place leaves up and open (may have to overlap 2 to get good wrap) and fill with ingredients. Fold in sides and roll tightly. Cut in half, if appropriate.
- with remaining sauce.
Might be a messy but delicious meal!
